Chateau Boyd-Cantenac Grand Cru Classe Margaux 2005

Red Wine of the Month

This wine is only now starting to come into its own. Definitely decant, and give it 3-4 hours to open up. This is a lean and beautiful wine with lovely tannic structure and an alluring aroma of cedar, blackcurrant, forest floor, and cigar box. It tastes toasty with a savory edge, and excellent structure.  The balance, finesse, and length are exception, and yet this wine still has so much more to give. I have a second bottle I’ll let lie another ten years. Oh, it’s going to be great!

Slavcek Sivi Pinot 2017

White Wine of the Month

Have you ever tried a natural wine? Here is your chance. This Slovenia wine (vineyard been in operation since 1769) is produced according to ancient tradition, it has a shorter maceration, so the wines are richer in coloring and taste. It has a peachy color, though some of my clients say it’s orange. It has aromas of minerality and fruit. On the palate, it has moderate acidity, a bit of complexity, and the Slovenia minerality that I love. Its length is good, with a surprise finish. It is made with 100% Sivi Pinot, dry, and different. I do enjoy different!

Silver Elderflower Margarita

Cocktail of the Month

Elderflower blossoms are extremely delicate and are therefore treated with great care from the moment they are hand-picked to the moment they are bottled. If the blossom is damaged in any way, it could impact its aroma and flavor. Adding to the challenge of delivering the blossom in perfect condition is the need for speed. It is important that the elderflower is as fresh as possible at the time it is macerated to ensure that its fresh aroma and flavor are captured. But don't worry; once it's part of your margarita, you can slow things down and savor every sip!

  • 1 oz elderflower liqueur

  • 2 oz tequila

  • 3 oz fresh lime juice

  • 3 tbsp powdered sugar

  • kosher salt
